Grasshopper Mint Pie

Grasshopper Mint Pie

25 large marshmallows

1/3 cup milk
3/4 teaspoon mint extract
Few drops of green food coloring (6)
1 small container of light whipped
   topping, thawed
Chocolate cookie crust
Shaved Chocolate

• Melt marshmallows with the milk over low to medium heat.

• Add the extract and food coloring.
• Cool in the refrigerator until mixture mounds off a wooden spoon.
• Fold together with whipped topping and pour into the crust.
• Chill thoroughly. Sprinkle shaved chocolate over top of pie just before serving.
