3 eggs -Dairy
1 cup sugar -11
2/3 cup pumpkin -11
1 teaspoon lemon juice -5
¾ cup flour -11
1-teaspoon baking soda -11
1-teaspoon cinnamon -11
½ teaspoon ginger -11
¼ teaspoon nutmeg -11
½ teaspoon salt -11
Beat eggs on high speed of mixer for 5 minutes. Gradually beat in sugar. Stir in pumpkin and lemon juice.
Stir together flour, baking soda, cinnamon, ginger, nutmeg and salt and fold it into the egg mixture.
Spread on a 15 x 10 x 1 inch pan that has been lined with parchment paper.
Bake at 375° oven for 15 minutes. Turn out onto a clean kitchen towel that has been sprinkled with powdered sugar. Roll starting at narrow end. Cool, unroll and fill with your favorite filling. Suggested fillings are whipped toppings, ice cream or a creamed cheese mixture.
