Rhubarb Surprise

Rhubarb Surprise

3 cups rhubarb
1/2 cup sugar
3/4 cup water
Combine and simmer 10-15 minutes until soft.

1/3 cup margarine
1 egg
1 cup flour
2/3 cup sugar
1 teaspoon orange peel
1 teaspoon baking powder
1/4 teaspoon salt
2/3 cup milk
1/2 teaspoon vanilla

2 T sugar

Combine shortening and 2/3 cup sugar and beat.  Add egg and orange peel and beat well.  Add dry ingredients to creamed mix along with milk.  Still till smooth.  Add vanilla.  Pour batter into 8x8 pan.  Spoon hot rhubarb over batter and bake at 350 degrees for 40 to 50 minutes.  After about 20 minutes sprinkle the 2 tablespoons of sugar over batter and continue to bake.
(Recipe can be doubled and put in 9x13 pan.)
