Strawberries and Bananas with Fruit Glaze
4 cups strawberries
• Cut bananas into a fruit juice (orange juice) or put into a water and ascorbic acid solution to help prevent browning. Drain fluid from bananas prior to making salad. Cut strawberries and bananas into bite size pieces, put into large bowl and top with fruit glaze.
1/2 cup sugar
3 1/2 tablespoons Ultra Gel modified food starch or 2 tablespoons cornstarch
1/3 cup orange juice
3/4 cup pineapple juice
1 tablespoon lemon juice
• Combine sugar and Ultra Gel or cornstarch in a medium size saucepan. Add orange, pineapple and lemon juice. Cook over medium heat stirring often until thickened and bubbly. Cool before adding to fruit.
• The Ultra Gel will make a glaze that is not as thick as cornstarch. It is available from food specialty stores.
