Two Grain Pilaf

Two Grain Pilaf
 
2 1/2 tsp vegetable oil
1/2 cup brown rice
1/3 cup pearled barley
1/4 cup grated raw carrots
1/2 cup chopped raw onions
2 1/2 cups hot chicken broth

1/4 cup toasted sliced almonds, optional

Preheat oven to 425° F. Spray a 9 x 9" pan with non-stick spray, add oil and place in the oven to heat for one minute. Stir in the grains and return the pan to the over for 7 minutes, stirring two or three times. Bubbling may appear, and it should smell like the grains are roasting. Remove the pan from the oven and stir in the grated carrots, chopped onion, and chicken broth. Cover the pan and return it to the oven. Turn the heat down to 350° F. Bake 30 to 45 minutes, until moisture is absorbed. Remove pan from oven and let stand a minimum of 5 minutes. Fluff, if desired and serve hot.

An optional garnish is 1/4 cup of toasted sliced almonds, sprinkled over the top of the pilaf.
