Something sweet is coming to Hays this fall.
Smallcakes Cupcakery and Creamery franchise has leased space at the newly constructed Tebo Village on north Vine Street. The Hays store is expected to open in a few months, said co-owner Ashley Stroup.
Stroup also opened the same franchise in Great Bend and had been looking for a place to expand.
“It’s done well, and now we’re just wanting to expand,” she said. “The location we got is perfect, and we think it will do great in Hays.”
Co-owner of the local franchise is David Hart, also of Great Bend.
Stroup is a graduate of Fort Hays State University and said she is excited about serving the Hays community.
They expect to hire approximately 10 employees in Hays, including a local manager, but have not yet started the hiring process, she said.
The store will feature a variety of gourmet, fresh-baked cupcakes, with flavors including lemon drop, peanut butter cup and caramel crunch. More traditional favorites include birthday cake, red velvet, chocolate and vanilla with pink frosting.
The bakery will serve up a dozen signature flavors each day, in addition to two daily specials that will change constantly. Special orders and catering also will be available.
“We can make other things than our daily flavors. We do special orders,” she said. “We want to cater for weddings, events, office parties, birthday parties — anything we can, we would love to cater.”
The franchise also offers homemade ice cream in a variety of flavors, including “24 Karrot,” “Cookie Monster” and “Chocoholic.” A full menu can be found online at smallcakescupcakery.com.
Stroup was in Hays last week to attend the grand opening of neighboring Billy Sims BBQ and offered mini cupcake samples to local customers.
“They went over so well,” Stroup said. “People were very impressed and wanted more.”
