Fall is upon us and the weather is proof. Much cooler mornings and evenings have been a welcome after a hot and humid summer  - at least in south central Kansas.

As I reflect on my posts over the last couple years, it seems with every new blog I write, about some type of natural disaster happening. The wildfires and now Hurricane Harvey has hit Houston and South Texas hard. With that being said, it reminds me to always be grateful for each day and each moment that you don’t find yourself in the midst of any disaster.

Growing up on the farm, my parents had a familiar saying (especially my mom)  “have an attitude of gratitude."
It usually came out more like, “you need an attitude of gratitude young lady!”

However, I think about it often and try to practice it daily. Pay kindness and compassion forward, help anyone you can and I challenge you to practice random acts of kindness.

I hope you all enjoy my recipes this time. They are the epitome of simple, yet favorites of my kids so they’re tried and true. Simple sides including steamed vegetables are so easy to complete this meal. You can also add rice dishes and/or bread for those that need more to fill them up. For the most health benefits, I usually try to focus on meat for protein, vegetables and fruit and eliminate bread, pastas and unnecessary carbohydrates. If and when I serve bread, rice, or pasta I almost always use whole wheat bread and pasta and brown rice. Bran muffins are also a great addition to any meal and are packed with fiber. They are also very filling.

Enjoy fall, get outside in the glorious weather. Lots of fall festivals are happening all over this great state of Kansas featuring something for everyone in the family.
