Qdoba to open this fall

Qdoba Mexican Grill hopes to open in Hays in late August or early September, said Eric Estes, president and CEO of Estes Enterprises Inc., Pratt.
Estes’ company, which owns the Long John Silver’s at 3380 Vine, will partner with S&H Enterprises LLC, which owns the property at 3310 Vine, where Mattress America and Discount Liquor were located. That building, south of Long John Silver’s, was torn down late last month, and will be replaced by Qdoba Mexican Grill Retail Plaza.
Qdoba Mexican Grill will share a parking lot with Long John Silver’s on the north side of the plaza, while a motor bank is planned for the south side. In the middle will be Mattress America and Discount Liquor.
“Man, it’s going to be great,” Estes said. “We are super excited.”
The restaurant will employ approximately 40 people, with a little over half of those jobs part-time.
Qdoba Mexican Grill, which also provides catering, specializes in mission-style burritos, grilled quesadillas and signature flavor entrees which are all able to be customized by the customer.
